Only in some markets
Uber is known to provide you with a "cashless experience." Hence, they do not support cash in overwhelming number of cases. Even UberTaxi, which allows you to call a local taxi, does not support the cash option in most areas.
Whether you can pay by cash is not determined by the Uber service you choose, but is dependent on which market you are requesting a ride. This "feature" was launched back in 2016 in selected markets, and is still only available in a few countries. This is NOT available in the USA at the time of this writing.
In order to pay by cash, you specify this under Payment Options in the Uber app. If the "cash" option appears, then you know it's available in your city, and you are allowed to pay the driver when he or she arrives (and trip completed).
Some of the cities that support cash service are below. However, these were considered "experimental", and we cannot verify whether all cities/countries on this list still support the cash option.
