The key is takeaway is that even trips booked in advance are subject to normal pricing - "based on demand" at the time of the trip. Therefore, if there is a surge effect on the date of trip, you will potentially pay more than what you saw on the day you booked.
You will be given a notice when the car is on the way, i.e. when the driver accepts the ride. You theoretically have the freedom to cancel the trip at that point. The cancellation policies and fees differ from city to city, but the guideline in the US major cities is that you have about 5 minutes to cancel without a fee.
