I heard stories where Uber drivers even after the trip calling and texting them. How can I avoid this? I don't have a dummy phone number and even if I did, the app wouldn't allow it, right?
How can I avoid drivers from stalking me now they have my cell phone number?

Your contact info, email or phone, is not communicated to the drivers.
Your contact information is not displayed to the drivers. When the driver contacts you through phone or text, they are calling the "relay" or central phone number of Uber, and Uber relays the call/message to you. The same is true when you contact the driver. Neat, huh?
So you do not have to worry about Uber driver having your information.
