No need to specify # of passengers, unless it's the carpooling service (i.e. UberPool and Lyft Line)
With Uber and Lyft, there is no need for you to specify the # of passengers unless it is for a carpooling options such as UberPool and Lyft Line. Just make sure there is enough capacity (say 4 for UberX and 6 for UberXL).
For UberPol and Lyft Line, you are allowed to take one friend with you. However, you must specify this upon making a request within the app. This is so they know how many people to expect and make sure there is enough for you.
