Rideshare services like Uber and Lyft are open for business all hours of the day. You can request a car any day or time of the day, assuming you are in the city they operate. You can check RideGuru on whether your city is supported.
However, whether there are drivers operating on that day, at that time, and at your location will depend on...well, the drivers. The business model of on-demand car services is based on supply and demand, so you need to be mindful of that before you request a ride. (Speaking of supply-and-demand, if the supply is low, you may be dinged with surge pricing. Look it up here.)
If you live in a large city or in an area there are many others taking rides, there should be plenty of drivers. (assuming the demand isn't out-pacing the supply) Then again, even if you don't, you shouldn't give up, because there may be some drivers in your area who is catering to the small number of riders in your area.
So the short answer? Yes, you can request a ride any time any day. You just might want to check and see! If you need a car in the future and want to make sure Uber or Lyft is in your area, a good idea may be to try using the app days in advance (say, check a week before you need one), and see what the supply is like!

I always drive at 4:45AM on Mondays. I can grab a few surges and make good money. If I feel like it, I also get out Thursday nights around midnight, Saturday at 2AM, and few other areas. I actually have like ten of these timesots, wheremy phone reminds me to go out. I don't always go out, but I do so I can make extra cash. All drivers become familiar with when the surges may occur. Some keep it a secret, some share openly. lol
