What is the difference between UberAir and Uber Elevate?
The Guru Take
Uber Elevate is the concept that came first. UberAir (or uberAir) more recently and refers more to the service that will eventually be offered.
UberAir and Uber Elevate both refer to the same program at Uber that has been working on and currently planning to launch it service in 2020. It consists ot "flying cars" or "VTOL" aircraft that would launch from designated areas and transport passengers. However, their use are a bit different.
"Uber Elevate" has been around longer and it also refers to the program, research, and the concept Uber has been investing in, and Uber even offers conferences and summits called "Elevate."
"UberAir" is a more recent term and refers more to the "service type" Uber will offer to its customers, similar to UberX or UberBlack.

Comments
The future of air travel truly seems to be getting closer, especially with projects like UberAir and Elevate. I often wonder how travel habits will change when flying becomes as easy as hailing a taxi. Recently, after a routine flight was delayed, I found the page https://cathay-pacific-airline.pissedconsumer.com/customer-service.html — I wanted to understand how passengers solve similar problems. I read a ton of stories, and now I'm convinced: before boarding a plane, it's better to know how customer support works, because technology changes, but the human factor remains.
Thanks. that makes a lot of sense.
You should go edit the wikipedia page on Uber. They mention them as the same, but you are right. It looks like Uber uses the terms differently, even though they dont' seem to cleanly define the terms apart.
