Drivers will not know if you are under 18 by simply looking at the app. The idea is that the riders have already been vetted out by Uber, and they simply need to accept the incoming requests for rides.
So the simple answer is yes.
Just to be clear, you are not supposed to be using the Uber app or requesting Uber rides, unless you are 18 or older. This is outlined in Uber's term of use. If you want to utilize rideshares legitimately, you can look up rideshares that are specific to children. Check here: Rideshare Services for Children
