Looks like a pretty cool feature to let my kids start using Uber on my same account. Does anyone have experience with this? I believe it is intended for letting kids take Uber. Sounds super convenient. are there any gotchas.

No, this isn't for children under 18. Each user has to quality terms of use.
No, minors still cannot utilize Uber's service. Family Profiles is basically for a family to share a single payment method, say one credit card. This enables family members without their own credit cards to still utilize Uber's services.
Each person still needs to download the app, create an account, and agree to Uber's full terms of service. Here's quote from Uber regarding Family Profiles:
"Each rider added to your Family Profile must meet Uber's terms of service. To obtain an account, riders must be at least 18 years of age or the age of legal majority in their local jurisdiction. "

As the guru puts it, I think it's purely for sharing a payment method. Basically for famly members who don't have their own credit cards.
I too was excited when I saw this first. I thought this would let me dispatch a car easier to my elderly parents, but nope.
This doesnt even make sense, you can use the same credit card on multiple accounts anyways...
