You can use RideGuru's fare estimate tool to estimate the pricing of those two options (and others). For example, here is an estimate from Manhattan to Newark International Airport.
However, note that both options you have listed have a 6 person capacity. Either will work; Uber SUV is a "luxury" option that will cost more than Uber XL.

UberSUV and UberXL provide similar sized vehicles. One should be enough, albeit a bit tight.
UberXL and UberSUV give you similar sized vehicles. They are both SUV that can accommodate up to 6 passengers (not counting the driver). You may tend to get larger cars with SUV, because their line-up includes larger cars such as the Cadillac Escalade and Suburban (which are actually 7-passenger vehicles), but they do cost quite a bit more.
Since there are only give in your party, you can use the one empty seat to stow one or two of your luggage there. The rest hopefully will fit in the trunk space. You may be a bit tight, so you may want to gauge the car capacity using RideGuru's luggage guide.
