When scheduling through the Uber app, the reliability depends on your location and the availability of local drivers. Unfortunately, the reservation is not 100% guaranteed and is dependent on the availability at the time. Here's a thread that'll help:

Just keep in mind that if you ask your driver to change the route, they are supposed to honor it. Also, remember that the price estimate can change, depending on the route you take. The price is based on duration and distance and there's no guaranteed rate if you request a route change.

Good point! ...but I think Uber EATS drivers are regular Uber drivers who happen to accept food pickup requests. Hence, even they are still held to the same car requirements!
There may be smaller Uber services aroudn the world though. For example, UberZip in India is meant to be for 2-door cars.

No, the destination does not have to be in the same city. As long as the driver is cool with you, you can take Uber anywhere you want, even to locations not supported by Uber.
Of course, you should make sure that there will be Uber available for your trip back!
We might be working with two forces here. One is the airport authority who may catch the driver doing illegal pickups. The other is the Lyft app that may catch your location and deny your request.
I first thought if you just leave the terminal curb area, to say, rental car location, you will be safe. However, that is still considered as the airport premise. With that said, I think if you can pick out a private property near the airport, say Best Western or Pacific Marina Inn, you should be good There's also a neighborhood close to HNL called Hickam, which is like a mile. That may work too. I am sorry I am not able to give a concrete answer.
